Educational materials: healthy eating for a healthy environment

This article analyzes a teaching sequence for secondary school students aimed at fostering sustainable attitudes to food consumption, and the educational materials derived from it. The sequence focuses on meat consumption owing to the significant environmental impact associated with the intensive production systems used. The study addresses concerns over the sustained increase in global demand for food and the tendency to approach the subject of food in the classroom from the perspective of health only. The teaching sequence, which focuses on developing critical consumers and their commitment to sustainability, comprises 20 activities based on exploration of the topic, introduction of new knowledge, synthesis, and assessment.
